Here's a simple recipe for "Veggie Roll-Ups", which first appeared in the August 2007 issue of Highlights High Five. It works with kids of all ages, doesn't use the stove, and creates a healthy and delicious treat.

- Wash your hands.
- Wash some lettuce leaves.
- Chop some favorite veggies (carrots, bell peppers, etc.).
- Spread salad dressing on each lettuce leaf.
- In the center of each lettuce leaf add some chopped vegetables and grated cheese.
- Fold each lettuce leaf so the filling stays inside. Enjoy your tasty, healthy finger food!
