Soup from a Pumpkin

You Need

  • pumpkin
  • apple
  • apple juice
  • vegetable broth
  • butter
  • half-and-half
  • sugar
  • salt
  • pepper
  • nutmeg

Before You Begin

  • Wash your hands.
  • If you are using fresh pumpkin, steam or cook it to make it soft.

What To Do

Soup from a Pumpkin
  1. Peel an apple. Cut it into small pieces.
  2. Put 2 cups of cooked or canned pumpkin in a bowl.
  3. Add 1 tablespoon of sugar, 1 teaspoon of salt, 1/2 teaspoon of pepper, and 1/4 teaspoon of nutmeg to the pumpkin. Stir.
  4. You, the adult, can cook the apple pieces in 2 tablespoons of butter over medium heat for 5 minutes. Put the pumpkin mixture in the pot, and slowly add 2 cups of vegetable broth and 1 cup of apple juice. Heat thoroughly, but do not boil.
  5. Add 1/2 cup of half-and-half. Stir and serve.

Variations

  • Try making the soup with carrots or butternut squash instead of pumpkin.
  • Add a small amount of cooked brown rice to the soup for extra texture.
  • Top each serving of soup with a decorative dollop of plain yogurt or low-fat sour cream.
